Peanut Butter Muesli Cups

When Aldi brought out their Natural Peanut Butter it was an easy switch for me. I am always conscious of sugar, salt and fat in my food and making a healthier choice for my family. When I compared this one to others on the market you could see the health benefits on the food contents immediately.
So Aldi asked me to put together a recipe highlighting this peanut butter as the star, which I thought I'd share as a delicious and easy snack recipe that you won’t mind the whole family enjoying.

Peanut Butter Muesli Cups
Recipe:
1 and 1/4 cups of Muesli
2 tablespoons of Peanut Butter
2 tablespoons of Honey
1 tablespoon of Coconut Oil
Dark chocolate or Cacao
Filling (more peanut butter)

Method: Grab your muffin tin (I used a silicone one here) and grease. In a bowl mix the muesli, honey and peanut butter until it is sticking together. Spoon into the muffin tins and use something to flatten the centre so you can add filling later and give them the cup effect. Freeze for 10-15 minutes.
Next with a teaspoon, spoon your peanut butter filling in. I found that because the “Oh So Natural” Peanut Butter has all the oils still in the jar there is no need to melt or soften the peanut butter, however you may need to heat your peanut butter to get it runny. Again freeze for 10-15 minutes.
Grab your microwave safe jar. Add your coconut oil and either dark chocolate or cacao powder whatever you prefer and mix until it forms a runny liquid and pour on top of your cups frozen peanut butter cups. Freeze until set, this may take a few hours.
These are best eaten out of the freezer and best kept in the freezer to hold their shape. Now grab that cuppa and enjoy!
